Chuy’s was founded in 1982 in Austin, Texas
Chuys Tex-Mex Grill will be calling Cookeville home soon. The company announced on its website that it is currently hiring a manager for a planned S. Willow Avenue location.

Chuy’s was founded in 1982 in Austin, Texas, before growing into a household name — thanks largely to its generous portions and delicious food (trust me, I write from experience).
“Way back in 1982, Austin, Texas, became the home of the place that does real Tex-Mex better than anyone. Yes, we are talking about us! Let’s take a trip down memory lane to see where we started and how we have stayed true to our original vision,” according to a statement from Chuy’s.
Founders Mike Young and John Zapp envisioned “a fun and funky Tex-Mex restaurant that served authentic, fresh food in an atmosphere that appealed to everyone.”
In the late 2000s, Chuy’s decided to “let the universe in on our little Tex-Mex secret.” The company’s first location outside of Texas opened in Franklin, Tennessee, in November 2009. Soon, Murfreesboro felt the Tex-Mex love, and Tennessee became a key market for the brand’s expansion.
Today, Chuy’s operates more than 100 locations across 15 states — including Colorado, Virginia, Florida, Ohio, Indiana, Georgia, Alabama, Kentucky, Oklahoma, North Carolina, South Carolina, California (Los Angeles), Arkansas, Mississippi, and eight locations in Tennessee.
With the growth of The Willows Shopping Center project, a Chuy’s location there would appear to be a natural fit. The Willows will sit on the 40-acre tract of land and feature Target, Home Depot and other restaurants at the Southeast corner of S. Willow Avenue and I-40.
Will Chuy’s be one of the restaurants announced on that site?
