Chicken Salad Chick set to join The Shoppes at Eagle Point

COOKEVILLE – Management officials today announced that Chicken Salad Chick, the nation’s only southern inspired, fast casual chicken salad restaurant concept will begin construction on a new store this week at The Shoppes at Eagle Point. The 3,000 square-foot, 110-seat restaurant will open in spring 2019 and will include an outdoor patio.

“We are thrilled to introduce the brand’s made-from-scratch, crave-able food to our neighbors,” stated Christy Eischeid, franchise partner for the location. “Cookeville is a beautiful town, and Chicken Salad Chick is the perfect fit for the community. We look forward to joining The Shoppes at Eagle Point this spring and partnering with the community to offer exciting dining and catering options for events and local businesses.”

Chicken Salad Chick joins a number of other dining and retail options at The Shoppes at Eagle Point, which celebrated its grand opening late last year. 

The Cookeville location is owned and operated by franchisee team Christy Eischeid and Hudson Sandefur of Cookeville Chick, LLC. The Cookeville Chick partners have more than 14 years of experience in the food service industry, with Sandefur owning six Zaxby’s restaurants across Alabama and Mississippi and opening his first CSC location in D ’Iberville, Mississippi in October 2018. Eischeid was owner and operator of three Zaxby’s restaurants for 12 years in the Chattanooga area. After opening his first CSC location, Sandefur was seeking new CSC markets, and knew that Eischeid was the perfect partner. “I was already a devoted fan of the Chick,” said Eischeid. “I am very excited about developing our team members and spreading the Chicken Salad Chick mission to enrich lives in the great city of Cookeville.”
